Summer school on Soft Matter & Foodstuff. The goal of the summer school is twofold. First, it will provide a series of introductory lectures on Soft Matter covering polymer physics, colloid dispersions and gels, structural characterization, rheometry, and multiscale modeling of network-like materials. Second, the school will apply these concepts by offering more advanced classes focusing on food ingredients (e.g., proteins, polysaccharides, and fat) and food features (e.g., interfaces, tribology, fracture, and extensional rheometry).
